Soup of Peels

Recipe Description: 

A very nutritious and tasty appetizer made from the peels of vegetables which are usually discarded.

Serves: 
8-10
Ingredients: 

2 cups small pieces of stem or thick skin of any veg.
1 small onion, cubed
1 carrot, cubed
1 small potato, boiled and mashed.
1 large tomato, boiled and mashed.
1/4 teaspoon ginger + garlic paste(optional)
2 teasp. Salt,
1 teasp. sugar
1/4 teasp. black pepper powder

Instructions: 

Heat 1 teaspoon butter in the pan and add veg, onion, carrot and ginger garlic paste.

Fry on a medium heat, stirring frequently till they become transperant or cooked.

Add the mashed potato, tomato and 6 cups of water.

Add salt, sugar & pepper. (or as per taste).

Boil for a minute.

Garnish it with cream, coriander leaves or parsley
