Sweet and sour, tangy dish of bittergourd
1)1/4 Kg. or 3 Medium Size -- Karate, Karela or Bittergourd
2)1 teaspoon -- Red Chilly Powder
3)1 marble size -- Tamarind
4)1/4 Bowl or 1 Handful -- Jaggery
5)1 and 1/4 teaspoon -- Salt
6)3 Tablespoon -- Cooking Oil
7)1 Pod of almost 10 to 12 Flakes -- Garlick
Preparation--
*Make thin slices of Karate, sprinkle 1Teaspoon salt over it,mix well and Keep aside.
*Grind Tamarind, chilly powder and 1/4 teasp. salt to a smooth paste, using 1/4 cup water.
*Separate the flakes of garlick and peel them.
Cooking Method--
*Heat the oil in a frying pan or kadai.
*Sqeeze the karela slices by pressing tightly in the fist and put them in the hot oil.
*Fry on medium heat till it turns brown. (It takes almost 5 to 10 minutes.)
*Then pour in the paste of chilly and tamarind.
*Cover it and cook on a low flame till Karate becomes tender.
* Add Jaggery and cook further for 5 minutes. Stir occasionally.
* And your Walvale is ready to eat.
