vaingan(brinjal) - 6 small sized
onion - 1 big sized
tomato - 1 big sized
dhaniya ( coriander)powder i t spoon
dry coconut 1 cup
cinnamon(chakke) 2 piece,lavang 5-6,ginger+garlic paste -1 spoon
coriander leaves,turmeric powder- 1/2 spoon,
red chilli powder- 2 spoon
salt,jaggery little , karibevu (curry leaves),sun flower oil- 150ml, mustard seeds,tamarind juice little.
dhaniya+dry coconut+ chakke+lavang+ginger+garlic+ coriander leaves mixed and make a paste.add chilli powder and turmeric powder and little jaggery(bella).add salt for taste.keep a side.
take a brinjal cut the outer surface (such that we can insert masala inside the brinjal.)and put it in water and put little salt.slice the onion and tomato keep aside.take out the brinjal from water and insert prepared masala into the brinjal
take pan put oil after getting hot put mustard seeds+curry leaves+sliced onion fry till onion become brown put salt for taste, then add prepared brinjal. fry in oil add sliced tomato mix well put tamarind juice.cover pan with plate keep in small flame for 20 minutes.
