SURNOLI
Aamchi Pancakes ..Soft nnn Spongy!!! Tastes best with Gharche Loni(Butter).
1.Rice - 1 1/2 cup
2.methi seeds - 7-8
3.curd / buttermilk - appx 1/2 cup
4.pohe- 1/4th cup
5.jaggery - 3/4 - 1 cup
6.grated coconut - 1/2 cup
7.salt - 1/4th Tsp
8.turmeric(haldi)- 1/4 - 1/2 tsp.
9.oil - as needed. water to grind.
10.plain eno (fruit salt)- 1/2 tsp.
1.Soak rice in water with methi seeds for a minimum of 4-5 hours.
2.wash pohe and keep aside.
3.grind the soaked rice, curd/buttermilk,pohe,jaggery,grated coconut,salt and haldi together with little water.make a smooth thick paste like idli batter.
4.keep this batter to fermant for atleast 7-8 hours.
5.Add eno and mix well in the batter at the time of making surnolis.
6.Heat a non stick pan and grease it with oil,spread the batter like uttapa (thick), put little oil around the surnoli and cover it with lid on low flame.
7.surnolis are ready to eat.
