Pudina Chitni (Mint Chutney)
Recipe Description:
Flavorful mint chutney. Goes very well with fodyos, kababs, and other appetizers. Also great in sandwiches. This lasts for several days if refrigerated.
Serves:
5 to 8
Ingredients:
1/2 cup pudina or mint leaves,
1/2 cup coarsely chopped onion,
1/4 cup chopped cabbage,
1 small size sliced carrot,
1/4 cup of cauliflower chopped
5 tiny cloves of garlic,
3 med. sized green chillies
lemon juice from 1 lemon
1 teasp. salt
1 tablesp. cooking oil
Instructions:
Heat the pan on high flame. Add cauliflower & carrot. Stir vigorously all the time.
When they become transparent or half cooked, add onion & cabbage and continue stirring till they become golden brown.
Turn off heat. After it cools down, grind it along with all other ingredients. Yummy pudina chitni is ready.
