Patrado (Alu vadi)

Recipe Description: 

Rolls made of colocassia leaf multilayered with spiced floud and steamed.

Serves: 
4-6
Ingredients: 

Rice four - 2 cups
Besan - 2 cups
Red chilly powder - 3 teaspoon
Tamarind paste - 3 teaspoon
Hing - 1/2 teaspoon
Jaggery - 1 ball of a size of a medium size lemon
Salt- 2 teaspoon
Baking soda - 1/4 spoon
Colocassia leaves(aloo leaves) - 6 Medium sized

Instructions: 

1)Wipe the leaves with the wet piece of cloth.

2)Crush the embossed stem seen on the leaves with the spoon.

3)Mix both the flours, chilly powder, tamarind, hing,jaggery, soda & salt in
bowl and then add water to make a smooth paste.

4)Keep 1 leaf on the big flat plate, apply the little paste all over. Then keep
another leaf on the left side, covering half side of the first leaf.
Apply little paste aver it. Then keep third leaf on the right side in the
same manner. Then repeat the action at the bottom side. Thus apply leaf & paste
alternatively & evenly.

5) First turn inside all the 4 sides of this pile and then roll it completely;
and tie the roll with a thread.

6)Cook the roll in pressure cooker.

7) After cooling down, remove the thread and make slices.

8) Eat them as it is or deep fry them to eat or shallow fry them by tampering
them with mustard seeds and hing to eat.

We dont get these leaves in Shanghai, Can i try out the same in any other leaves? Will it be good?Pl reply. I just love this dish..

Dear Mohinivikas
You may use any edible leafy vegetable. If leaves are sour, then no need to add tamarind paste.

If leaves are not big enough to roll, cut them in to fine pieces and add directly to the same batter as for patrado. Make medium sized balls. Flatten a little with palm to make it easier to cook. Cook properly in pressure cooker before frying.
