This can be had as a main course during lunch or as an accompaniment with your evening cocktail. I prefer the former as Gujarat is a dry state! :(

Serves: 
4-6
Ingredients: 

१. एक होडी सुरमई (साधारण १ किलो)

२. ३ अंडी

३. भरपूर पुदिना

४. कोताम्बरी पाल्लो

५. कान्तिली सोयी (३ चमचे)

६. पाचवी मिर्संग

७. Bread crumbs पावडर (ना झाल्यारी बारीक रवो)

८. अर्ध वाटी नारळेल तेल

९. तांबड्या मिर्सांगी पावडर

१०. हळदी पावडर

१२. मीट

Instructions: 

१. सुरमई सम धूवनु ताजे सपूर (very thin) slice कराती.

२. सुरमईक मीट, तांबड्या मिर्सांगी पावडर आणि हळद लावनु २-३ तास दवर्याती.

३. पुदिना, कोताम्बरी पाल्लो, आणि सोयी वाटून ताजी अगदी सुक्की चिटणी (very, very dry चिटणी) करनू घेयाती.

४. अंडी सम बीट करतना तांतु चिटणी सम मेळअव्नू घेयाती

५. सुरमई कुडके बीट केलेले अंडे/चिटणी मिश्रणआंतु घाल्नु मिश्रणआचे coat कराती

५. Frying panआंतु थोडे नारळेल तेल घेव्नू हून करनू तांतु मिश्रणाने coat केलेले सुरमई भाजून घेयाती

६. पियावाच्या (कांद्या) तमबली आणि rice सांगाती lunch enjoy कराती!
