This is the original recipe of the Mota special served at "Kamath's" on the campus of Manipal Engineering college.
This recipe was given to me by Shekhar, the waiter at Kamath's.
1 Tomato, medium, choppped.
1 Onion, small, finely chopped
Milk - about 30 ml
Eggs- 2 nos
2-3 tbsp. Coriander leaves, chopped finely
Butter- 1 tablespoon
A pinch of turmeric
Salt, pepper, and red chilli powder to taste
In a thick non-stick pan put in the butter on medium heat and let the butter to foam without turning dark.
Add chopped onion and saute until onions are translucent.
Add all the other ingredients -- salt, turmeric, red chilli powder, pepper, chopped tomatoes, and coriander leaves and continue to saute until tomatoes are cooked.
Add milk and turn down the heat.
As the mixture starts to boil, add the whisked eggs and scramble over low flame.
When the eggs are done but the mixture is still liquidy pour into a bowl, garnish with chopped coriander leaves and serve with hot buttered toast.
