Mix Veg Sukke
A flavorful and delicious mixed vegetable recipe. This dish requires very little oil and has mild spices.
Cauliflower - 1/4 kg.
Potato - 1 big size
Green pea - 1/2 cup
Coarsely chopped tomatoes - 2 medium size
Grated coconut - 2cups
Dried red chillies, coarsely crushed - 7
Tamarind pulp - 1 tablesp.
Salt - 2 teasp.
Water - 4 cups
Cooking oil - 2teasp.
Mustard seeds - 1 teasp.
Coriander leaves (cilantro) - 2 tablesp.
Turmeric Powder - 1 teasp.
Fenugreek seeds (methi) - 1 teasp.
Heat oil in a pan.
As oil gets heated fry chillies in it just to make them crispy.
Remove only chillies from the pan.
Simmer the flame.Put coriander seeds, fenugreek seeds in the oil.Roast them till they till they start changing their original colour put off the flame.let it cool.
Remove only spices from the oil & grind them along with chillies,coconunt & tamarind pulp by adding 1 cup of water.After grinding it finely; leave it aside.
Peel the poteto & cut in to med. sized pieces.
Now again heat the pan with the remaining oil in it.
As oil gets heated, put mustard seads in it.
When musturd seeds start sputtering add corriander leaves & turmeric powder, followed by all the veg.s in it.
Put the salt & remaing 3cups of water.
As soon as veg.s get cooked add ground masala
Boil to make a semi fluid gravy.
