Dum Alu Dum

Recipe Description: 

Alu dum is ideal as a starter for a get-together or a party.easy n fast to prepare, its a tasty dish enjoyed by one and all.happy eating.

Serves: 
4-6
Ingredients: 

1)1kg baby potatoes/small alu
2)ginger/adrak-2 "
3)garam masala
[corriander seeds:2 tabsp, cumin seeds 1 tabsp, 5 small green cardomoms, 5 cloves, 1" cinnamom]
4)tamarind pulp
5)red chilly powder-1/2 teasp
6)turmeric powder-1/2 teaspoon
7)salt

for garnish:
lemon
chat masala
dhaniya
green chillies

Instructions: 

-dry roast all the garam masala and grind in mixie to a fine powder when cooled down
-adrak: 2" adrak to be finely grated
-tamarind, the size of a lemon, to be soaked and fine pulp prepared
-boil the potatoes in cooker to 2 whistles
-on cooling,peel the potatoes n slightly prick them all over with a toothpick for the masala to later soak in

-heat a kadhai,add 1/2 katori oil
-add 2 tabsp ghee
-add grated ginger in oil,fry till slightly brown
-add the potatoes n stir fry till lite golden
-add the powdered garam masala, red chilly powder, turmeric powder and salt and mix well for it to envelop the potatoes
-add tamarind, mix well and remove from heat.

after it cools down, garnish with juliennes of green chillies, pinch of chat masala, a pinch of the garam masala prepared earlier, corriander leaves and dash of lemon and serve.
