Chatnis from throw aways
Peels chatni,high in fibre,healthy accompaniment.Different peels each separately to make specific chutneys viz unripe bananas or ridge gourd/dodka/turai/ghosalen may be used.
1.Peels of vegetables either ridge gourd/dodka(Ghosalen) or unripe bananas.
2.1/2 tsp salt.
3.@ red chillies.
4.1/2 tsp amchur or wee bit of tamarind.
5.1/4 grated coconut.
6.1 tsp jeera-cummin.
7.1/2 tsp mustard seeds.
8.@-3 kadipatta/curry leaves.
9.A pinch of asafoetida-hing.
10.A pinch of turmeric powder11.2 tsps oil.
1.Wash the peels(anyone vegetable),pat dry,chop fine & toast them on a slow flame with just a tinge of oil,adding turmeric,hing just when it is done (to maintain a good colour & flavour).
2.Toast the red chillies & jeera-cummin in a tinge of oil adding a tinge of turmeric & hing just before it is done(to maintain a good colour & flavour).
3.Dry grind the grated coconut,redchillies,cummin,tamarind(Whole,juice or pulp)or amchur,salt,to a fine paste.
4.Now add the toasted peels & further grind with very little water until well blend.
5.Make a tadka of mustard seeds,curry leaves,hing & turmeric powder.
6.Add the tadka to the chutney.
7.Serve as an accompaniment.
