Brinjal chutney

Recipe Description: 

In the memory of my mother-in-law that I learned tasty Bringal, ( potato or navalkol)chutni.

Ingredients: 

Green(or any other kind of)Bringal - 250 grms.
Red chillies -4/5 as per taste
Urad dal - 2/3 teaspoons
Asafoetida -1 small spoon
Tamarind pulp -1 spoon
oil -2to3 table spoons
salt -as per taste

Instructions: 

Chop bringal into small pieces.Heat 2 table spoons oil in the big pan and fry bringal pieces covering the lid on the pan till it cooks.
In the another small pan roast red chillies with 3 to 5 drops of oil to become crispy and keep aside in a plate.In the same pan with 1 tsp.oil fry one or little more urad dal till it turns golden brownish, add Asafoetida(Hing)continue to fry for few seconds till it smells and then put off flame.
First grind finely these ingredients(red chillies,tamarind,urad dal,asafoetida)then add roasted bringal pieces,add salt also and make thick paste.
For seasoning again heat 2 tablespoons oil in the same big pan,fry remaining urad dal till it becomes golden brown ,add remaining half spoon asafoetida and the last add grinded paste. While boiling the mixture stir continuously. After boiling for 3/5 minutes switch off the flame.
Serve the chutney with roti or chapathi.

Note: Similarly Boiled or steamed Potatoes or Navalcol chatneys also can be made. But for Navalcol chutney while grinding add grated coconut as the Navalcol is watary.
