Batata Song

Recipe Description: 

Potatoes cooked in a semi dry onion-tomato curry. This dish goes especially well with Daali Toy served over plain boiled rice.

Serves: 
4-6
Ingredients: 

2 medium size onions, chopped finely.
3 medium size potatoes, boiled and chopped into cubes.
Whole red chillies 8-10
Tamarind paste 1/2 tsp
Oil (coconut oil can be used)
Salt.

Instructions: 

Grind red chillies with tamarind into a paste and keep aside.

Cook onion in a little bit of oil.

Once onions have softened, add the ground chilly and tamarind paste, salt and potatoes. Add enough water to bring it the consistency of a semi-dry curry.

Bring to a boil. Batata song is ready

Add tomatoes for a wonderful flavor

I'm not a big fan of the regular song but love it when tomatoes are added.

2 medium size onions, chopped finely.
5 medium size potatoes, RAW, peeled and diced.
1.5 Heaped Tsp Red chilli powder
Tamarind paste 1/2 tsp
Oil (coconut oil can be used)
Salt.

Method:

1) Saute the onions till slightly darker than pink but NOT blackened.
2) Add the Chilli powder and smell it in the saucepan. The chilli powder should smell raw.
3) Fry the Chilli powder on a low flame till the fragrance of the chilli powder changes. Note that the change in fragrance should be distinct and NOT imagined!
4) Add the Tamarind paste and smell it in the saucepan. The Tamarind paste should smell raw.
5) Fry the Tamarind pasted on a low flame - adding a few drops of water if it turns too dry - until the Tamarind paste smells cooked. Again the change should be distinct and NOT imagined.
6) Now add the potatoes and sufficient quantity of water to enable the potatoes to boil. Sufficient boiling is achieved when the potatoes disintegrate when you try to stir the Song.
7) You can add salt anytime after adding the potatoes.

Suggest adding slit green chillies and chopped ginger pieces to the onions while frying.
